Soupe à l’oignon



Does it get any better than home made soup using all ingredients from scratch. Perfect rainy day meal, Soupe à l’oignon. Ok really I'm not bilingual, although my mothers from Quebec she did not speak to us in French and honestly it was not my strong subject in school. But this soup was so fancy I thought it needed a proper title. 

I decided to make french onion soup not out of an old family recipe or a craving, it was actually out of the need to use up the 4 large onions in my veg drawer. So this is how this delicious meal was dreamt up.

I had already started some homemade bread in my bread machine and thought that it would be perfect in the soup. If you don't make your own bread I'd suggest using a crusty baguette. 

Please note I did not use all typical ingredients as I did not have them all on hand. For instance I used chicken broth instead of beef. But this soup was still amazing!!

Soupe à l’oignon ingredients

6 tbsps of butter
4 large onions
2 cloves of garlic
1tbsp brown sugar
1/2 cup of white wine
2 L of chicken broth (or typically beef )
1 bay leaf
Home made crusty bread (or French baguette )
Home smoked cheese (or cheese of choice)

I started by slicing all four onions in to small rings. Then in a large heavy pot I melted the butter and added the onions. I let them cook on medium, stiring them till 
Transparent. 



Then I added minced garlic and brown sugar and continued to cook till just browned. Don't for get to keep stiring you want them to brown evenly. 


Once browned add your wine and scrape all the browned pieces that may have gotten stuck to bottom. 



Then transfer into your slow cooker. Adding your broth and bay leaf.


Cover cooker, set on High, and cook 4 to 6 hours. If desired, set on Low and cook 8 to 10 hours.

A few minutes before you are ready to serve this amazing meal, slice your bread and cheese. Poor your soup into oven safe bowls and top them with your bread and cheese.  


Place bowls on a baking sheet to catch all the spills. Set your oven on broil and place soup on top rack. 

Now let the magic happen!!

Only a few minutes and you'll have bubbling cheese and delicious 
Soupe à l’oignon!!! Or French onion soup?! Mmmmm


That wasn't very hard to achieve this fancy meal, was it? 
Don't forget your oven mitts and to let your family or guests know their soup bowls are very hot!!!
